This Fiano hailes from a 0.9 hectares parcel of old vines in the volcanic clay-limestone soil of Lapio, the heart of the Fiano di Avellino appellation. Here, the coolness, high altitude and daily temperature fluctuations lead to a wine with particular precision and complexity. Joaquin's vinification creates a beautiful concentration that makes the wine swell on the finish.
Hand-picked in late October, the wine undergoes a 2-day cold maceration after pressing. After a long 60-day fermentation, the wine rests 8 months sur lie in fibreglass and stainless steel tanks, without temperature control, followed by 12 months of bottle aging. This process tempers the youthful floral notes in favour of a distinctive roasted accent.
